Joy & Judy LIVE - Healthy Twists On Traditional Super Bowl Favorites

You're going to want to make these nachos and burgers ASAP!

Sweet Potato Nachos

  • 1 bag frozen alexia sweet potato fries
  • 1 cup black beans
  • 1 cup frozen corn
  • Handful grape tomatoes
  • 2 avocados
  • McCormick taco seasoning
  • Cheddar cheese (shredded)
  1. Sprinkle taco seasoning over potatoes before baking. Bake according to package directions.
  2. Layer with black beans, corns, sprinkle with cheese and put under broiler until cheese has melted.
  3. Sprinkle with tomatoes, avocados, and drizzle with sour cream or Joy and Judy's sour cream substitute.
Sour Cream Substitute
  • ½ cup greek yogurt
  • 1 tablespoon apple cider vinegar
  • Juice of ½ a lime
  • 1 teaspoon of salt
  • ½ teaspoon fresh ground black pepper
Creme Sauce instructions
  1. Combine greek yogurt in small mixing bowl with vinegar
  2. Stir until creamy and smooth
  3. Add salt and pepper
  4. Serve over sweet potato fries

Chickpea Burger

  • 2 portobello mushroom caps
  • 1 can chickpeas, mashed
  • 1 egg
  • 2 tablespoons parm cheese
  • ¼ cup almond flour
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Olive oil for sauteing
  • 2 tablespoons fresh parsley, minced
  • Sliced tomato for garnish
  • Arugula, for garnish
  1. Mix all ingredients together (minus the portobello). Taste mixture and adjust seasoning to your liking.
  2. Mold into patties and saute in oil for about 8-10 minutes per side
  3. Prepare and clean mushroom caps
  4. Saute until soft
  5. Place mushroom caps on dish and top with chickpea burger
  6. Add tomato slices and greens
