Be a STAR with these Holiday Ice Cream Sandwiches - Unwritten Recipes With Felicia

Beaches and pools have opened up and ice cream trucks are once more playing their jingle. Summer has finally arrived with fireworks and fireflies!

In this new episode of Unwritten Recipes, an OnlyGood TV Original Series, we commemorate Independence Day and cool down with host Felicia Levinson, with a helping hand from her son Simon, who shares with us her recipe on how to make Star Ice Cream Sandwiches and the story behind it.


Not every kitchen creation comes from a cookbook. Sometimes it's the story about the snack that makes it taste that much better! This story is about when Simon and her other 2 children were little. The local ice cream truck would be making its rounds but somehow only managed to reach their street around bedtime. Like clockwork, the kids would all race from the house in their PJ's when they heard the classic jingle of the truck as it rolled up the street. Since it was late, each of them would get an ice cream sandwich and patiently put the treat in the freezer, saved for tomorrow's adventures!

This prompted Felicia to turn this classic into a recipe of her own. She first shows how she takes freshly baked sheets of chocolate wafer cookies and cuts out star shapes. With Simon sandwiching vanilla ice cream (or any favorite flavor) between 2 cookies and then rolling them in sprinkles, this July 4th treat is ready to serve!

This is a simple way to create the classic ice cream sandwich right at home! It's a great treat for the kids (and adults) to helps them cool down and enjoy their summer fun. It's easy to make and delicious!

Felicia, mother, thespian and comfort food creator, concocts dishes from the recipes she learned from her mother, grandmother and other special family moments. Every dish comes with a story and every one is packaged with love.
