This Brazilian Restaurant Is Saving The Planet

The Bio Restaurante in São Paulo, Brazil is doing something that most restaurants aren't; it is helping save the planet!

Chef Alex Atala starred in Episode 2, Season 2 of Chef's Table, a Netflix original. The show takes us inside the kitchens and minds of the international culinary stars who are redefining gourmet food. The episode focused on Atala's love for the Amazon and his restaurant D.O.M. that uses native Brazilian ingredients, and stands for Deo Optimo Maximo, which translates as 'To God, The Good, The Greatest'.

Alex Atala just opened his new special project - Bio Restaurante in Brazil! What makes it so unique is the fact that it prides itself on having virtually zero food waste. In fact, Atala challenged his culinary team to figure out ways they could use the things they used to throw out.

"With mango, for example, we tried but we couldn't find a way to use its seed, but the skin did great in many recipes," Godoy says.

Head chef Raul Godoy and pastry chef Platinni Vieira have created the recipes and have succeeded in reducing the food waste to virtually zero.

"We have spent more than five months developing the recipes to make sure we could use even more parts of the ingredients we thought it would be possible," Godoy says.

Chef Alex Atala's innovative spirit is helping save the environment. We can only hope that his success inspires others to do the same!
