National Grilled Cheese Month!

It doesn’t get much better than biting into a gooey cheese-filled sandwich that melts in your mouth. That’s right; I’m talking about a grilled cheese; a sandwich that transports us back to a moment in time before I even swallow that first bite. And in honor of National Grilled Cheese Sandwich Month, I piled my shopping cart high with different cheeses, breads, and other ingredients to create the original and some quirky varieties on one of my favorite sandwiches.

The “Classic”

2 slices of white or wheat bread

2 or 3 slices of Kraft American Cheese singles

Butter, for spreading

1. Pre-heat a sauté pan on medium heat.

2. Butter one side of each slice of bread.

3. Layer 2 or 3 slices of the cheese on the bread to make a sandwich.

4. Place the sandwich on the pan and cook until bottom-side is golden brown, then flip.

5. Brown the other side of the sandwich, or until the cheese is completely melted.

6. Serve hot and enjoy!

Review: You can’t go wrong with this classic grilled cheese. If you’re in the mood for an extra cheesy sandwich, go for three slices instead of two.

The “Italian”

2 slices of roasted garlic ciabatta

2 slices of fresh mozzarella

1-2 slices of fresh tomato

1 leaf, thinly chopped, basil

Salt and pepper to taste

Olive oil

1. Pre-heat a sauté pan on medium heat.

2. Pour the olive oil into the pan to create a thin coating.

3. Lay the 2 pieces of bread flat.

4. On one slice layer the sliced mozzarella. On the other slice lay down the tomato, then basil, and sprinkle with salt and pepper to taste. Sandwich the two halves together.

4. Place the sandwich on the pan with the tomato side on the bottom.

5. Cook the sandwich until crispy, or golden brown, then flip the sandwich.

6. Crisp the side of the sandwich, or until the cheese is melted.

6. Serve hot and enjoy!

Review: The roasted garlic ciabatta bread definitely took this sandwich to a new level. The combination of mozzarella, tomatoes, basil, and garlic took your taste buds on a journey to Italy.

The “Brie Lover”

2 slices multigrain bread

2 slices of granny smith apple

Brie, enough to spread a thick amount on one slice of bread

Butter, for spreading

1. Pre-heat a sauté pan on medium heat.

2. Butter one side of each slice of bread.

3. Layer the apple one side of the bread, then spread brie on the other slice of bread.

4. Put the two pieces together to make a sandwich, then place the sandwich on the pan with the apple side down.

5. Cook one side until golden brown, then flip.

6. Brown the other side of the sandwich, or until the cheese is completely melted.

7. Serve hot and enjoy!

Review: If you love brie, this sandwich is a must-try! The brie overpowered the apple flavors, but the fruit added an extra crunch to this savory combination.

The “Jalapeno Cheddar”

2 slices jalapeno cheddar bread

2 or 3 New York style sharp cheddar cheese

Butter, for spreading

1. Pre-heat a sauté pan on medium heat.

2. Butter one side of each slice of bread.

3. Layer the cheese on one side of the bread.

4. Put the two pieces together to make a sandwich, and then place the sandwich on the pan with the apple side down.

5. Cook one side until golden brown, then flip.

6. Brown the other side of the sandwich, or until the cheese is completely melted.

7. Serve hot and enjoy!

Review: Ready for a kick in the tongue? Try this spicy, yet flavorful pairing that wakes up your senses with those bites filled with jalapenos. This would probably rank as one of my top choices out of all these just because I love anything with a little extra spice. And if you can’t find any jalapeno cheddar bread, just use regular bread with cheddar cheese and jalapenos mixed in.

I learned a few things from my grilled cheese making adventure. 1) I am most definitely not one of those fantastic food photographers. How some bloggers are able to really capture the essence of how delicious something is beats me! 2) It’s really a fun attempting to come up with different recipes for one simple sandwich. And, 3) I won’t ever get sick of that original grilled cheese sandwich.

Many kids who love sports growing up dream of playing for their High School team and maybe even continuing on to play in college. Most kids with these dreams aren't like Calder Hodge, who was born without tibia bones and had his legs amputated above the knees when he was 2 and a half. This setback might have stifled the dreams of an ordinary kid, but with unbounded enthusiasm and determination, and the help of prosthetic blades, Calder, now 13, has learned to walk, run and channel his love of football to become a quarterback on his Magnolia, Texas school team.

Baby Countdown Enters Final Days - The Creation Of Us (S1:E7)

** OGTV's first The Creation Of Us (S1) playlist story of the week follows Aydian and Jenilee as they enter the final planning stages for the birth of their baby! **

What is more dramatic than the dwindling days before the birth of a couple's first child? In this episode of The Creation Of Us, the countdown is on as Aydian and Jenilee scramble to learn all they have to know about childbirth and being parents.

Although there is much to do, the parents-to-be are pretty organized. First, they sit down with their doula to come up with a day of birth and postpartum plan. They discuss their ideas for keeping Jenilee comfortable, and create checklists and guidelines to help manage all the details. Afterward, they are off to a birthing class where they go through what the actual birth will be like.

"The birthing class always makes me feel so much more secure about giving birth," Jenilee relates. "It's comforting to be developing a toolbox so I have things to grab from when the birth actually happens." Aydian has concerns and questions and their birthing teacher, Sarah, walks them through different techniques for the actual birth and things they can practice at home.

After the birthing class, they meet with their midwife for the first time. While a little nervous about a first meeting with someone so integral to the birth, Jenilee and Aydian are very excited to have both a doula and a midwife on board. "Jenilee and I chose to have a midwife because the birth process is so intimate," Aydian notes. "Our plan is to birth in a place that doesn't feel like a hospital. Ideally, if we are in a birthing center that makes us feel like we are in our own home, we can give that to ourselves and our child for the first moments of birth."

Jenilee and Aydian hope that if they are able to follow their plan, it will make the birth feel less medical and more spiritual, true to who they are as a couple. The clock is ticking – join them as they start the final countdown to the biggest day of their lives.
