**Peter's Bacon Mac n' Cheese**
INGREDIENTS:
1 box of mac and cheese (Chef Peter recommends Annies Organic)
2 tablespoon of butter, unsalted
2 tablespoon of unbleached flour
1 cup of mild cheddar cheese, grated
1/2 Cup of parmesiano reggiano
2 cups of heavy cream or whole milk
2-3 strips (but for the bacon lovers more)
Pinch of nutmeg
DIRECTIONS:
Add box of pasta and a small hand full of salt to boiling water.
Cook as directed on the box, usually for 8-10 mins.
Cheese Sauce: Melt butter in a deep pan on low medium heat
Add the flour, whisking vigorously for several minutes. Add the heavy cream and continue to whisk until sauce starts to thicken. Add cheese of your choice into the sauce and whisk until fully blended. Pour the pasta into the pan with cheese sauce and fold together using a spatula. Add some crunchy bacon pieces to the pasta and fold for a final time until cheese and bacon evenly coats the pasta!
Serve in a bowl with a fork or spoon!
