A Different Look at Pasta
It's World Pasta Day . . .Pasta? We can't get enough of the stuff. But lately there's been a trend to substitute pasta for...wait for it...vegetables! Now don't get us wrong, we're pasta-eaters through and through, and some of us even make it from scratch (Amanda!), but this alternative pasta idea sparked our curiosity. Even though we should be honoring actual pasta today, let's honor the fact that alternative pasta, aka vegetables, can actually be pretty tasty, and just as satisfying.
Undercooked, this one can be a little crunchy, and when overcooked it turns to a mush, but it's healthier for you. With only a quarter of the calories and less than a third of the carbohydrates, you can still enjoy an Italian inspired spaghetti night.

The first thing that comes to mind when thinking of this green vegetable isn't pasta, but it definitely makes for a great substitute in a couple different dishes.
